Eating healthy foods creates healthier people. It is estimated that almost
one-third of cancers are linked with poor diet. Chronic diseases such as
heart disease, hypertension, and diabetes are directly caused or made worse
by poor diet. Reducing calories, fat and cholesterol in your diet can prevent
or reduce the effects of these diseases.
Many
of us were raised on a high fat southern diet. While our meals are delicious,
they can be made healthier and taste just as good. That is the intent
of this cookbook.
This
cookbook was originally developed by a team of partners representing the
African Methodist Episcopal Church, 7th Episcopal District and the Cancer
Prevention and Control Access Network Program of Hollings Cancer Center
at MUSC. Recipes were gathered from parishioners. Ms. Jeannette Jordan,
a Registered Dietician with the MUSC program, converted them into a lower-fat
version. The new recipe was tested by a taste panel of local experts.
Those recipes that passed the taste-test are included in this book.
We hope you enjoy the recipes in our cookbook and will submit recipes
of your own. We will put your recipe through the same process as before.
In this way, we can expand our cookbook and bring you even more delicious
and healthy foods.
